APPLE DIJON KALE SALAD

I’m in love. The dressing of the Apple Dijon Kale Salad was enough to make me want to swoon. It’s a basic Dijon vinaigrette. It’s so delicious that I couldn’t resist the spoon into the pleasure of tasting it after. Since Kale is robust, it can stand well when pre-dressed with vinaigrette, making this salad perfect for preparing weekly meals. I’m sure that once the juice of the apples starts to mix in the dressing, it’ll enhance the flavor.

I love how this salad has numerous tastes and textures in one bowl. It has the slightly bitter taste of curly Kale, crisp and sweet apples, crunchy walnuts, and super sweet raisins. And it all is finished off with sweet dijon vinaigrette. It works. It is a success.

INGREDIENTS

1/3 cup olive oil ($0.69)

1/4 cup apple cider vinegar ($0.24)

One clove of garlic ($0.08)

1 1/2 Tbsp Dijon mustard ($0.14)

1/4 tsp salt ($0.02)

10-15 cranks of freshly cracked pepper ($0.05)

1/2 1 lb chopped Kale (about one lot) ($2.32)

One medium granny apple smith ($0.79)

1/4 cup raisins ($0.27)

Half cup of walnuts ($0.80)

INSTRUCTIONS

Rinse the Kale in a colander, then rinse it under cool water. Let the Kale dry while you make the remainder part of your salad.

In a blender, combine the olive oil, apple cider vinegar, Dijon mustard, garlic clove,h sal,t, and pepper. Mix until the garlic has been chopped and the dressing becomes smooth.

Wash the apple and cut into thin slices or chop it into cubes. Cut the walnuts into halves. Make sure the Kale is as dry as feasible, and then add it to a large bowl with the walnuts, apples, and raisins. Start with a small dressing portion, drizzle it over the salad, and stir in a coating. You can add more sauce if you like (I made a whole batch).
