MEDITERRANEAN HUMMUS BOWLS

It’s no secret that I love bowl meals, don’t you? It’s a common practice for me to go to my refrigerator, take whatever oddities and stray items I’ve got, and toss them into a bowl to serve as an evening meal. Most bowls have some kind of basis (grain or greens for salad), protein, some veggies, and some dressing or cheese on the top. The rice-hummus combination is among my top bowls, so I highlighted this here and demonstrated how versatile it can be. The Mediterranean Hummus Bowls aren’t much of a “recipe” and more of an easy meal plan template. I’ll give many ideas to swap out ingredients and substitutes below, but I’d like you to think outside the box and come up with unique recipes based on the ingredients in your refrigerator!

INGREDIENTS

Seasoned Ground Beef

1/2 lb. ground beef ($2.65)

1/2 teaspoon dried oregano ($0.05)

1/2 teaspoon cumin ($0.05)

14 tsp new window garlic powder ($0.02)

1/4 tsp salt ($0.02)

Bowl ingredients (all ingredients can be substituted)

4 cups cooked rice ($0.70)

1 cup of hummus* ($1.48)

1 pint grape tomatoes ($1.89)

1/2 English cucumber ($0.75)

1/4 onion red ($0.07)

1 cup kalamata olives ($0.90)

2 oz. crumbled feta ($1.10)

A handful of fresh parsley chopped ($0.25)

INSTRUCTIONS

Place the ground beef in an oil skillet with the oregano garlic powder, cumin, and salt. Stir and cook the meat on medium heat until it is fully cooked and evenly incorporated with the other spices.

To construct the bowls, add 1 cup of rice and 1/4 cup of hummus to each bowl. Divide the remaining ingredients into the four bowls or whatever amount you like. Eat immediately or store until you are ready to serve.
