BAKED SPICY CHICKEN SANDWICHES

You’ve never eaten a spicy chicken sandwich with yogurt before! This may sound strange, but bear with me. I love incorporating simple ingredients from the pantry in new and exciting ways, which is why I made the Spicy Chicken Sandwiches to show the versatility of yogurt and how it can be utilized in both sweet and savory dishes. The more adaptable an ingredient is, the less likely it is to end up in the trash, as we don’t want food waste in our kitchen!

After successfully using plain yogurt instead of buttermilk in breading the Homemade Roasted Chicken Nuggets, I was sure I needed to make it in a sandwich format. The method is the same. However, I added a little spice in 3 layers on the chicken! YES! Then, I prepared simple honey yogurt Coleslaw that’s a little sweet to offset the hot chicken.

CAN THESE SANDWICHES BE REHEATED?

These Baked Spicy Chicken Sandwiches are most delicious when freshly baked, and that’s why the two-slice batch size, but I’ve had some success reheating the cooked chicken in a pan over moderately low temperature. They’re not as crisp as they are freshly baked. However, the hot pan removes moisture, making the breading less spongy.

SLAW OPTIONS

If you’re not keen on sweet slaw, consider making my homemade ranch dressing to serve as a dressing for your slaw instead. The ranch is excellent when paired with a spicy chicken. P.S. The ranch dressing recipe makes use of plain yogurt. 😉 Or you could use a store-bought ranch dressing.

INGREDIENTS

Baked Spicy Chicken

Half cup breadcrumbs ($0.13)

14 tsp of garlic powder ($0.02)

1/2 tsp smoked paprika ($0.05)

1/2 tsp cayenne ($0.05)

1/8 tsp salt ($0.01)

freshly cracked pepper ($0.02)

1.5 1 Tbsp of cooking oil ($0.06)

One cup of plain yogurt ($0.25)

1/8 tsp salt ($0.01)

1 tsp hot sauce ($0.04)

One skinless, boneless chicken breast (about 2/3 1 lb.) ($3.99)

Honey Yogurt Slaw

3 cups of mix of cabbage (pre-bagged) ($0.65)

2 Tbsp mayonnaise ($0.17)

1/3 cup of plain whole milk yogurt ($0.33)

1/2 Tbsp honey ($0.06)

1 tsp Dijon mustard ($0.06)

1 tsp apple cider vinegar ($0.02)

1/4 tsp salt ($0.02)

freshly cracked pepper ($0.02)

For Serving

Two buns ($1.00)

INSTRUCTIONS

The oven should be preheated to 425oF. Set a cooling rack made of wire over a baking tray to accommodate the chicken that has been breaded.

In a large shallow bowl or container, combine the breadcrumbs with garlic powder, cayenne, smoked paprika, salt, and freshly cracked pepper to make your chicken’s breading. Once the ingredients are combined, then add the cooking oil and stir until the spiced breadcrumbs are like moist sand.

Mix the yogurt, salt, and hot sauce in a different, broad, small bowl.

Put the chicken breasts on a cutting board and protect them with plastic, and then make use of a mallet or a rolling pin to lightly crush the chicken breasts until it is an equal thickness, not greater than 3/4-inch thick. Cut the breast of the chicken in half and then sprinkle with salt and some cayenne.

Pour each piece of chicken into the hot sauce and yogurt mixture, ensuring that the chicken is completely coated, and then dip it into the spiced bread crumbs and again coat both sides. Using a wire rack, the coated chicken should be placed on the baking sheet.

The chicken is baked for about 25 minutes or until the internal temperature is 165oF By carefully flipping the chicken halfway through.

While the chicken bakes while the chicken is baking, make this honey yogurt salad. In aIn a small dish, stir together mayonnaise, honey, yogurt, Dijon, vinegar, salt, and freshly smashed pepper.

Put the shredded cabbage slaw mixture in a large bowl. Pour the dressing over it and mix until the cabbage gets covered in sauce.

When the chicken is done baking, you can build your sandwiches. Put a piece of chicken that is spicy on each bun. Top with a large portion of honey yogurt salad. Enjoy!
