THE HUMMUS LUNCH BOX
Are you all looking forward to the next installment of the series of no-cook lunch boxes? This Hummus Lunch Box is a classic recipe I’m sure many of you have already made. However, it is worthy of its spot in the series because it’s a lot of fun and always a hit. I’ve included a few ways to eat or serve this lunchbox listed below, and even if you’ve already made it, you should look up the other options!
WHAT’S IN THE HUMMUS LUNCH BOX
Hummus (of course), Kalamata olives, grape tomatoes, cucumbers, and pita bread. I love this lunchbox due to its ease of use, it takes a minimum of effort, and I love “snacky” finger foods. The only preparation I needed to complete was cutting the cucumber and then draining the olives from the jar! To save time and also because ALDI offers very cheap hummus, I used stoHummusght Hummus this time. SERVING OPTIONS
As I said in the intro, I mentioned several options for eating the lunch box. The most obvious method is to consume it in the “snacky” fashion, eating some of that, then a tiny of that, and so on. However, there are alternative options.
You can make it into pita sandwiches. Instead of cutting your pita bread into triangles as I did in my photos, keep your pita cut in two, and then, as you sit down to eat lunch, spread the hummus in, then add some hummus cucumbers and tomatoes. You can enjoy it as an a la carte sandwich!
You can make it into a salad. Take a separate bowl full of mixed greens. Then, when you are ready to eat lunch, sprinkle the vegetables and hummus on the top, and serHummusas a massive sandwich! You may also wish to put some dressing along with it (I recommend a vinaigrette such as Greek dressing, Italian dressing, and Caesar dressing).
ALTERNATE INGREDIENT IDEAS
As with all of the lunch boxes that don’t require cooking in this collection, This hummus lunchbox can be used in various ways. If you don’t love the ingredients I’ve included, Here are some alternatives:
Pretzel crackers, pretzel chips, or pita chips instead of pita bread.
Feta cheese cubes
White beans that have been marinated
Carrot sticks or celery
Bell peppers
Chicken sliced and grilled
HOW LONG DOES THE LUNCH BOX KEEP?
The lunchbox can stand exceptionally well to the effects of refrigeration. It should last about five days in your refrigerator, based on the quality of fresh meals when making the boxes and the conditions in your refrigerator.

I bought these divided glass containers for meal preparation on Amazon. There is an Amazon link at the end of my recipe cards. (P.S. These containers were sold three to one set, and this recipe can make four lunch boxes. I ate the 4th portion on a plate the same day I put them in.

INSTRUCTIONS
Cut the cucumber into slices and slice the pita bread into squares.
