CURRY CHICKEN SALAD
I was undoubtedly slow to join this Curry bandwagon. I recall not being a fan of curry spice in the early two decades of my own life. Fortunately, people mature and evolve, and I eventually began to warm towards kicking up my curry (thanks to recipes such as Quick curried chickpeas ! ). I decided to incorporate yogurt and mayonnaise as the dressing for the Curry Chicken Salad because they each possess distinct flavors that they can provide to the dish. Yogurt is tangy, light, and an excellent match with curry spice, whereas mayonnaise is rich and creamy. If you want to add to satisfy your cravings make a simple substitution and use yogurt or mayonnaise. However, I’m going to tell you the mix of both is a magical combination.

Absolutely. If you’re not willing to undergo the hassle of cooking your breasts or have rotisserie chicken left over, chop it into pieces to make this delicious recipe. You’ll likely need about 3 cups of chicken chopped to make this recipe.
