CURRY CHICKEN SALAD

I was undoubtedly slow to join this Curry bandwagon. I recall not being a fan of curry spice in the early two decades of my own life. Fortunately, people mature and evolve, and I eventually began to warm towards kicking up my curry (thanks to recipes such as Quick curried chickpeas ! ). I want to incorporate curry into every dish, such as the curry chicken salad. Curry Chicken Salad

MAYO-YOGURT COMBO MAGIC

I decided to incorporate yogurt and mayonnaise as the dressing for the Curry Chicken Salad because they each possess distinct flavors that they can provide to the dish. Yogurt is tangy, light, and an excellent match with curry spice, whereas mayonnaise is rich and creamy. If you want to add to satisfy your cravings make a simple substitution and use yogurt or mayonnaise. However, I’m going to tell you the mix of both is a magical combination.

CAN I USE ROTISSERIE CHICKEN FOR THIS CURRY CHICKEN SALAD?

Absolutely. If you’re not willing to undergo the hassle of cooking your breasts or have rotisserie chicken left over, chop it into pieces to make this delicious recipe. You’ll likely need about 3 cups of chicken chopped to make this recipe.

INGREDIENTS

DRESSING

1/4 cup mayonnaise ($0.41)

One cup of plain yogurt ($0.19)

One teaspoon of lemon juice ($0.02)

1/2 tsp honey ($0.02)

One teaspoon curry powder ($0.10)

1/4 tsp salt ($0.02)

fresh cracked pepper($0.02)

SALAD

2.5 cups of chopped cooked poultry(*) ( $2.95)

Pinch salt & pepper ($0.05)

Two stalks of celery ($0.34)

$3.50 for three green onions ($0.12)

1/2 cup chopped almonds ($0.87)

1/2 cup raisins ($0.57)

INSTRUCTIONS

Make the dressing by mixing mayonnaise yogurt, lemon juice, spice powder, pepper, and salt in a tiny bowl. Check the sauce for taste and alter the salt or curry powder if necessary.

Sprinkle both sides of your chicken breasts with a gentle salt and pepper pinch. Cook the chicken breasts on a grill on the countertop or in an oven until cooked. The cooked chicken breast to cool before you prepare the remainder portion of your salad.

Finely dice the celery, and cut the onions green. Put the green onion, celery, chopped raisins, and almonds in an enormous bowl.

Cut the chicken into small pieces and place them in a bowl with onions, celery alm,onds, raisins, and celery. Mix to combine. Pour the dressing on the top of the salad and stir to cover.
